Please check the image setup from Appearance > Customize > WooCommerce > Product Images
The image size is dependent on that setting.

When I click the Color it switches to the correct variant and size
But when I click the size it’s pulling the thumbnail version w/c should be the full image

Have you tried the uncropped option from Appearance > Customize > WooCommerce > Product Images?
If so, give me temporary admin access to your site to check.
You can add new users by going to Users > Add New set the user and password for us, set the role to admin, and set the info here.
