I think you are misunderstanding the feature.
When you exclude a category, it means, you don’t want to apply variation swatches for the category.
You don’t have to exclude a category, rather than simply change the attribute type to “button” for this attribute Nikotingehalt (from Products > Attributes).

If you don’t want to install a translation plugin. You can simply follow this tutorial: https://youtu.be/uSGMiXEEsvI to translate plugin text without adding a translation plugin.
The tutorial will show how to translate a plugin’s string, you just have to select ‘woo-variation-swatches-pro’ plugin folder.

Excluding categories but keeping buttons for variations

Hi there,
we would like to use images for variations for certain categories only. But when we exlude categories (advanced settings), the variations of products of those excluded categories are displayed as drop down menu instead of default button. All our variations are shown as button.
For example: https://vapestation.de/elfbar-elfliq-nikotinsalz-liquid-strawberry-raspberry-cherry-ice-10ml/
This product has two nicotine variations (10mg and 20mg) that are shown as buttons. Here it does not make sense to show images for variations. But if we exclude the category of this product from variation swatches pro, the plugin shows those variations as drop down menu. We do not want this. We would like to show all variations as buttons.
I disabled the pro version of the plugin as I was not able to solve the issue.
