I can’t use the class disabled, since this disables my out of stock notifier form, so I need something else so I can style the variants as out of stock but still “enable” them so users can select and see the notifier form

Unfortunately, you cannot do this with CSS.
The premium version of the plugin can do this for you.
There is an option to enable clickable out-of-stock that will help you reach the goal.
