You can add new users by going to Users > Add New set the user and password for us, set the role to admin and set the info here.

These are not individual products, they are the single products created from each variation.
You can check this by deactivating this plugin: Show Single Variations Shop & Category for WooCommerce

The single variation plugin, displays the product variations as single products.
Without the plugin it will work just like you expect it.
